Almost nobody buys an ingredient. You buy a protein bar, a diet soda, a biscuit that claims to be high-fibre — and somewhere upstream, a company you have never heard of decided what actually goes into it. Arboreal is one of those companies, and it is Indian. Swati Pandey and Manish Chauhan founded Arboreal Bioinnovations in May 2018. Pandey studied at IIT (ISM) Dhanbad and Imperial College London; Chauhan at BITS Pilani and London Business School. They set up in the Biotech Park in Lucknow — not a city that appears in many startup stories — with offices since added in Bangalore and New Delhi. The company describes itself as an ingredient technology business serving food, beverage and nutraceutical brands. Its platform combines natural extraction, natural fermentation, enzymatic modification, encapsulation and formulation science, and the portfolio spans proteins from yeast and plants, a suite of sweeteners, cocoa, fibres and marine collagen. Its best-known consumer-facing line is Pyure, a range of zero- and low-calorie sweeteners built on monkfruit, stevia and erythritol. The pitch it makes to brands is a specific one. Most product development starts with a finished-product brief — make me a low-sugar drink that tastes like the full-sugar one. Arboreal argues the interesting work is a layer below that, at the ingredient itself: if the sweetener has a cleaner taste profile or the protein disperses better, the formulation problem downstream mostly disappears. The company frames this as solving taste, texture and nutrition challenges rather than reformulating around them. On 30 July 2026 it closed a Series A of about $24 million — roughly ₹230 crore — co-led by EAAA Alternatives and Omnivore, with participation from existing shareholder Rainmatter, Zerodha's fund. The money is earmarked for manufacturing capacity, research and development, and commercialising the next generation of its ingredient portfolio. What makes the company worth a directory entry is not the round size. It is the position: India is one of the largest food and beverage markets in the world and imports a great deal of its functional ingredients. A domestic company that can make sweeteners, yeast proteins and fibres at scale is solving an import-substitution problem and a formulation problem at the same time — quietly, from Lucknow, for eight years before anyone wrote about it.
